Yes, THAT Flapjack
I am gaining a reputation as master maker of the best flapjacks in the world. I can make a mean flapjack – even if I say so myself.
If you are thinking golden syrup and sugar – think again. The most sugary ingredient in my austere version is a banana.
This flapjack is more like a divine protein bar. I take it everywhere as my snack. There are many days when this is my lunch too. I know a lot of people who enjoy this for breakfast.
Here is my rough and ready recipe.
It is vegan and gluten free.
Ingredients
2 large bananas
250g crunchy peanut butter
125g oat milk (or other non-dairy milk)
300g (gf) oats
1 packet of frozen raspberries, the bigger the packet, the more raspberries in the mix or a punnet or two of raspberries
100g od sliced very dark (vegan) chocolate – optional
Coconut oil for the dish
Method
Pre-heat the oven to 180 degrees
Mash the bananas
Add the peanut butter and vegan milk
Mix
Add the oats
Mix
Add raspberries and chocolate (if you are using) and stir
Pour into a pre-oiled dish
Bake for about 25 mins. It is ready when browned and bouncy.
